Berbere Spice Blend
Berbere is a fiery spice blend integral to Ethiopian and Eritrean cooking. The real deal includes some lesser known spices such as korarima, rue and ajwain, which can be hard to track down, so feel free to omit. This earthy-sweet seasoning blend is common in Ethiopian cooking. Paprika and allspice bring in smoky, savory notes while cardamom, cinnamon, and cloves punch up the sweet notes. Nutmeg, fenugreek, and turmeric add earthy flavors, and cayenne rounds everything out with a kick of heat. While the blend can be found pre-made in specialist stores, you can’t beat the aromatic freshness of this homemade version.
Ingredients:
¼ cup ground dried ground chiles
¼ cup paprika (you can do half smoked paprika and half sweet paprika for a more complex flavor)
1 t cayenne pepper
1 t onion powder
1 t ground ginger
1 t cumin
1 t turmeric
1 t ground coriander (cilantro)
1 t ground cardamom
1 t ground fenugreek
1 t garlic powder
½ t ground cinnamon
½ t ground allspice
½ t ground cloves
¼ t ground nutmeg
Instructions:
Gather all ingredients. Place ground chiles, paprika, and cayenne pepper into a bowl; stir. Add onion powder, ginger, cumin, turmeric, coriander (cilantro), cardamom, fenugreek, garlic powder, cinnamon, allspice, cloves, and nutmeg. Gently whisk together until thoroughly mixed. Store in an airtight container, preferably glass.
