Awaze Beef Tibs
If you love spicy cuisine, you’re going to fall in love with Awaze Tibs. Ethiopian awaze tibs is an Ethiopian stir-fry dish of cubed or sliced beef or lamb cooked in spicy awaze sauce. “Awaze Tibs” translates to “Spiced Meat”, and that is exactly what you’ll get with this recipe. The awaze sauce focuses primarily on berbere spice, a robust Ethiopian spice blend of bold chilies and aromatic spices, essential to many East African and Ethiopian dishes. This brings to the dish its signature heat and flavor. This recipe is made with beef, though you can use lamb as well.
Ingredients
2 pound ribeye steak, trimmed and cut into thin slices
1 small onion, chopped
1 tsp minced fresh rosemary leaves
2-3 tsp fresh ginger, minced
5 cloves garlic
2 tsp berbere spice blend
1 tsp salt
2-3 Tbsp olive oil
1-2 Tbsp melted butter
½ cup water
1 cup fresh chopped tomatoes
Instructions
Purée or mash the fresh ginger and garlic into a paste. In a bowl, mix together the steak, onion, rosemary, ginger, garlic, berbere and salt. Place a pan on medium heat. Add the oil and butter. When the pan is hot, place the spiced meat and onion mixture into the hot pan and cook for about 5 minutes.
TIP: Do not stir the meat right away. Let it sit in the hot pan for the first couple of minutes to brown on the bottom. Also, make sure you use a wide-enough pan so the meat does not steam. Steaming also prevents browning.
Add ½ cup water and cook for another 5 minutes. Taste for seasoning. Add fresh chopped tomatoes, and cook for 2-3 minutes more. Serve with rice, or with injera (which can be purchased from a local African market).
