Ingredients

2 cloves garlic, minced
½ cup olive oil
¼ cup red wine vinegar
Juice of one lemon
1 red onion, thinly sliced
¼ cup minced parsley
Salt and Pepper to taste
1 can chickpeas
1 can kidney beans
1 can black beans
1 can green string beans
1 can yellow wax beans
1 can navy beans

Instructions

In a small bowl, add garlic, olive oil, lemon juice, and vinegar. beat with a fork until well blended. In a large mixing bowl, add all 6 cans of beans, parsley, and the sliced onion. Mix well to blend together. Add the oil and vinegar mixture, stir lightly to coat the beans completely, (if you stir too hard, you will mash up the beans). Cover and refrigerate for at least 4 hours, or overnight to let the flavors blend. Before serving, stir lightly to mix it up a bit! Enjoy!
