Chunky Bleu Cheese Dressing

Whether it’s for a wedge salad, a plate of wings, or anything you fancy, Homemade Chunky Blue Cheese Dressing is a must-have accompaniment. It’s creamy, tangy, and so easy to make you’ll never use store-bought again!
Ingredients:
1 cup good mayonnaise, full or low fat (not olive oil)
1 cup sour cream
2 T fresh lemon juice
2 garlic cloves, minced
salt and pepper to taste
2 t Worcestershire sauce
4-5 oz crumbled bleu cheese
1 T parsley, finely chopped
Instructions:
In a mixing bowl, combine half of the blue cheese and the remaining ingredients, using a fork or spoon to “smash” the blue cheese into the mixture. Fold the remaining blue cheese in to preserve the crumbles. Serve immediately or store in an airtight container in the fridge for up to two weeks.
Notes:
To make thinner: add in 1-2 tablespoons of milk or buttermilk.
To make smoother: use a food processor in step one to puree the ingredients before folding in the remaining blue cheese.
*check that you are using vegetarian cheese, if needed
