Cheesecake Stuffed Chocolate Chip Cookies

Cheesecake Filling:

4 oz cream cheese
4 tablespoons powdered sugar

Chocolate Chip Cookie Dough:
½ cup butter, slightly softened
½ cup brown sugar
½ cup granulated sugar
1 egg
1 tsp vanilla extract
2 cups flour
3 tablespoons cornstarch
½ tsp baking soda
¼ tsp salt
1 cup semi-sweet chocolate chips, plus more for topping

Instructions:
Make the Cream Cheese Mixture:

In a small bowl, cream together the cream cheese and powdered sugar until smooth.
Divide the cream cheese mixture into 12 mounds on a parchment-lined plate or baking sheet. Place in the freezer and chill for 15-30 minutes.
Make the Chocolate Chip Cookies:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
In a medium bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
Add the egg and vanilla extract, mixing until well incorporated.
Gradually add the flour, cornstarch, baking soda, and salt to the wet ingredients, stirring until just combined.
Fold in the semi-sweet chocolate chips.
Using a large cookie scoop, scoop out the cookie dough and make a well in the center of each ball.
Place a chilled cheesecake mound in the center of each cookie dough ball and fold the dough over, sealing it well.
Place the stuffed cookie dough balls on the prepared baking sheet and bake for 11 minutes. The cookies may look underdone in the middle, but that’s okay as they will continue to bake as they cool.
Immediately after removing the cookies from the oven, top each with additional chocolate chips.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
