Ingredients
3-4 lbs chicken (either bone in, skin on pieces, or tenders)
2 eggs, beaten
1 cup buttermilk
2 cups all purpose flour
4 tsp paprika
1 tsp salt
1 tsp white pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
1 tsp parsley
1 tsp sage
1 tsp thyme
1 tsp marjoram
1 tsp tarragon
1 tsp celery salt
1 tsp chives
Instructions
In a large bowl, whisk together buttermilk and the eggs. In a separate large bowl, or plastic zip bag, add the flour, and all of the herbs and spices, mix well to combine. Dip the chicken pieces in the buttermilk mixture, and let the excess drip off. Next, coat the chicken in the flour mixture. If using the bowl, toss well in the flour to make sure its evenly coated. If using the plastic bag method, shake like crazy. Remove to a baking paper lined tray to do the rest. Add some vegetable or canola oil to a large, deep frying pan, and heat 170c. Cook the chicken in batches, turning to brown it well on all sides, about 15 minutes, for the full chicken pieces. Cook time will be about 10 minutes for the tenders.
