No Bake Peanut Butter Cookies
No bake desserts are just the best. On a hot summer day, there’s nothing better then being able to make a good cookie without heating the oven. No bake oatmeal cookies are my favorite. I made these with both of my boys and they enjoyed how easy they were to make. They also loved that they could enjoy them pretty soon after we mixed the ingredients in the bowl. For once, my boys could lick the bowl and I didn’t have to worry about the eggs in the batter.
Ingredients
½ cup butter
1 cup white sugar
1 cup light brown sugar
1 cup milk
1 cup peanut butter (creamy works best, natural is too oily)
1 tsp vanilla extract or 1 pack vanilla sugar
Optional: a few dashes of cinnamon, speculoos seasoning, pie spice or similar.
3½ cups quick cook oatmeal
Optional: 1 cup of raisins, chocolate chips, chopped nuts, or a combination of these, (ex. 1/2 c chips and 1/2 nuts)
Instructions
In a medium pot, on medium-high heat, start to melt the butter, adding in the two sugars, and the milk, and stirring briskly with a whisk. Bring to a rapid boil, stirring frequently, and let it boil for 2 minutes, and stir every few seconds to make sure nothing sticks and the sugar dissolves! Reduce heat to medium and add in the peanut butter, allowing it to melt, also, add in the vanilla (vanilla sugar) and your spices, if using, at this time. Once your mixture is nice and smooth, remove from the heat, to a safe surface to continue. Next you want to use a wooden spoon or something thick to mix up the rest.
Add in the oatmeal and chips/nuts etc, if using, and stir like crazy, its gonna be thick and will give your arms a work out!! You want to fully coat the oats with the peanut butter mixture, this is what holds the cookies together, stir it up really well, and set aside for about ten minutes, to cool slightly! Next, get a measuring spoon, I use the 1 Tablespoon measure. Alternatively, you can just use your hands, and just roll it into little balls. Space them out on baking paper, to cool at room temperature, for about an hour. Once the have firmed up, you can place them in an airtight container, in the refrigerator. They don’t last long, but I would try to eat them within two weeks!!
