Creamy Spinach Shrimp Pasta

Ingredients:
1 500g box of your favorite pasta (we use fusilli, rotini or bowties)
500g box of frozen spinach with creme sauce
200-250g precooked, marinated shrimp (usually found in the seafood section)
2 cloves minced garlic
1 medium onion, diced
1 medium bell pepper, diced
2-3 medium mushrooms, diced
200g sour cream
125g cream cheese with garlic and herbs
salt and pepper to taste
Instructions:
In a medium to large pot, cook the pasta according to package directions. While the pasta is cooking, you can make the rest. I usually cut the veggies first to save time! In a medium frying pan, add a little olive oil or butter and heat to a sizzle. Add the garlic and brown it slightly, releasing the fragrance. Next, add the peppers, mushrooms, and onions, cooking for 5-6 minutes, until the veggies at at your desired tenderness. I prefer mine a little firmer, but you can cook them softer if you please. While your veggies are cooking, dump the box of frozen spinach with creme sauce into a large mixing bowl, go put in in the microwave for 4 minutes, stir well. If its not completed melted yet, that’s fine, it will be soon!
Use a spatula to add in the sour cream, and cream cheese to the spinach, and mix well, this is your sauce!! Scrape the containers well to get all the yummy goodness out! Next, do the same to the veggies in the pan, use the same spatula and get all the goodies from the pan into the bowl with the spinach mixture. Stir it up super well!! Next, add the shrimp, and mix it up to coat the shrimp with the sauce. Last but not least, the pasta! Add that in and stir to mix everything up with all the creamy, garlicy, shrimpy, deliciousness. I usually serve mine with some grated cheese and a loaf of garlic bread! Enjoy!
