This Garlic Butter Chicken and Broccoli is my go-to for those nights when I only have fifteen minutes but want something full of flavor and nutrition. It is my favorite speedy meal to whip up after a long workday or when friends drop in with little warning.
Garlic Butter Chicken and Broccoli Substitutions
If you do not have fresh broccoli you can use frozen but steam it separately so it does not water down the sauce.
Chicken thighs make a juicier substitute for breasts just trim and cut them the same way.
For a dairy free version I sometimes use more olive oil or a vegan butter substitute which still gives the sauce a silky finish.
Serving Suggestions
This chicken and broccoli is perfect on its own for a low carb meal but it also pairs beautifully over fluffy jasmine rice buttery noodles or even mashed potatoes for extra comfort.
For a lighter side serve it with a crisp Asian inspired slaw or a big green salad.
Ingredients
Chicken and Vegetables:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 cups fresh broccoli florets
Sauce and Seasonings:
3 Tbsp unsalted butter
1 Tbsp olive oil
4 cloves garlic, minced
1 Tbsp soy sauce
1 tsp lemon juice
½ tsp red pepper flakes (optional)
Salt, to taste
Black pepper, to taste
Garnishes:
¼ tsp sesame seeds (optional)
1 Tbsp parsley, chopped (optional)
Instructions
Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and sauté for 5-6 minutes, turning occasionally, until chicken is golden and thoroughly cooked. Remove chicken from pan and set aside.
Steam Broccoli: In the same skillet, add ¼ cup water and broccoli florets. Cover and steam for 2-3 minutes until broccoli is bright green and crisp-tender. Discard excess water.
Prepare Garlic Butter Sauce: Reduce heat to medium-low and melt butter in the pan. Stir in minced garlic and cook for 30 seconds until aromatic.
Incorporate Sauce Flavors: Add soy sauce, lemon juice, and red pepper flakes if desired. Stir to fully combine.
Combine Chicken with Sauce: Return the cooked chicken to the skillet and toss to coat in garlic butter sauce. Cook for 1-2 minutes to infuse flavors.
Finish with Broccoli: Gently fold in steamed broccoli until evenly mixed and well-coated with sauce.
Garnish and Serve: Remove from heat and sprinkle with sesame seeds and chopped parsley, if using. Serve warm as is or with rice, pasta, or cauliflower rice.
