Sausage Peppers & Onion Tortellini Skillet

Heavenly one-pot tortellini dinner! Tortellini made with sweet Italian sausage, bell peppers, onion and tomato cream sauce. So I had a very interesting conversation with my son the other day. I noted myself getting upset at him for eating noodles at lunch time. Before you get all judgy, let me explain…we have a ton of food! And I don’t mean we have a few things in the fridge, I mean, we have a good amount of leftovers pretty much all the time. I always make several things in a week to keep up with posting recipes here and some that are ideas in my head that I am testing. So there are plenty of nice choices for lunch available that are not noodles. I was actually offended that my son decided to eat noodles for lunch when we had meatballs, sausage and peppers, gnocchi and an apple cake! How, how in the world does one just forget about all that delicious food and just gets noodles? One of these days, I really am going to carry out my threats and start feeding the neighbors, even through he always runs to the fridge to shield it when I make this threat. It’s cute and all but a chef likes to see their food being eaten to the last drop and not passed for noodles. So a lesson to all of you who has a loving cook living with you and cooking for you is, “EAT all the food to the last drop and don’t forget to make the yummy noises!” (Or we might cry.)
Ingredients:
½ lb sweet Italian sausage
2 Tbsp vegetable oil
1 red bell pepper
1 orange bell pepper
1 medium yellow onion
3 garlic cloves
⅓ cup tomato sauce
1 cup heavy whipping cream
20 oz three cheese tortellini
Salt and Pepper, to taste
1½ tsp Herbs de Provence
¼ tsp red pepper flakes
Instructions:
Take skin off the sausage and pinch off 1/2 inch balls. Slice peppers and onions. Cook tortellini, strain and set aside. Preheat oil in a skillet. Cook sausage, onions and peppers until sausage is almost done. Add tomato sauce and heavy cream and stir well. Press garlic into the skillet and stir it in the seasoning. Stir in cooked tortellini and cook for a few minutes, stirring occasionally. Serve warm and enjoy!
