These Easy Sheet Pan Chicken Fajitas make the perfect simple and healthy weeknight meal for busy families, on the table in 35 minutes or less!

1½ lbs. boneless, skinless chicken breast, thinly sliced
3 bell peppers, sliced (get colorful)
1 yellow onion, sliced
2 T olive oil
juice of one lime
tortillas, tomatoes, lettuce, cheese, sour cream, avocado for serving (as desired)
2-3 T fajita seasoning OR the ingredients listed below!
¼ t black pepper ground
¼ t cayenne pepper
1 t garlic powder
1 t smoked paprika
2 t chili powder
½ t cumin
1 t kosher salt

Preheat oven to 400F. Spray a baking sheet with cooking spray, or drizzle with oil. Place the sliced chicken, bell peppers and onions on the baking sheet. Then drizzle them with olive oil and toss to coat. Place the remaining ingredients (fajita seasoning) in a small bowl, and stir well to combine. Sprinkle this spice mixture over the chicken, bell peppers and onions, and toss to coat. Bake for 20 minutes chicken through. Cook a little longer if needed, checking after 5 minutes. If needed, turn the broiler on high, to roast the veggies for about 2 minutes. Serve the fajitas, in your desired tortilla, with any extra toppings you’d like!
