Classic American Pancakes

Ingredients:
3 T melted butter
2 eggs, beaten
2 cups milk
2½ cups self rising flour
1 T granulated sugar
Vanilla Flavor (Vanilla Sugar packet or 1 tsp of extract)
Cinnamon to taste, Optional: Speculaas Seasoning, Apple Pie Spice, frozen or fresh fruit such as berries or bananas! Maybe even chocolate chips!
pinch of salt
1 T baking powder

Method: In a large mixing bowl melt the butter (in the microwave) Next, add in the eggs and beat well! Then, add in the sugar and milk, and mix well until completely combined. Add in the vanilla and seasoning, (add fruit or chocolate chips if using). Add the dry ingredients next, flour and baking powder, mix well, dough will be thick!! Add a bit more milk if they are too thick, and a bit more flour if they are too liquid. It should be a good medium consistency. Next, heat a non stick frying pan or griddle to med high heat, if using a frying pan, some melted butter adds a nice crispness to the pancakes! Lightly spray with cooking spray or oil if needed! (Not necessary if using the butter) check the heat of the griddle or pan by splashing a few drops of water on it… it the water dances on contact, its ready. Using a measuring cup, pour rounds of pancake batter on preheated pan, allowing it to spread a bit. when the edges look dry, and bubbles are forming in the center, lift the edge with a flipper to check the under side… should be a nice golden color… proceed to flip and cook the other side till golden as well usually just a few minutes. Remove to a plate while you finish cooking the rest of the pancakes, serve warm with butter, and syrup, and jam!

Makes about 16-20 pancakes depending on size!
