I absolutely love making this Oven Roasted Sausage And Potatoes Recipe whenever I want a hearty, flavorful meal that practically makes itself. The combination of smoky sausage, tender potatoes, and vibrant vegetables all roasted together results in a dish packed with comforting textures and bold, savory flavors. It’s one of those recipes I turn to when I want a wholesome dinner without standing over the stove for hours. Plus, the clean-up is a breeze since everything cooks on just one pan!

Ingredients

3-4 lbs potatoes, washed, cut to bite size chunks
1 – 2 med onions, diced
1 – 2 bell peppers, diced
3 – 4 mushrooms, diced
1 lb fully cooked Smoked sausage, cut in bite size cubes or slice into rounds, add more or less sausage to preference
Olive oil, a few drizzles to splash over potatoes, and veggie mixture, to coat with seasoning
Choice of seasonings, measure with your heart
(I usually use garlic powder, onion powder, paprika, oregano, Italian seasoning, parsley, salt and pepper)

Instructions

Preheat the oven to 220°c. Take your bite size potato chunks, and place them in a decent size mixing bowl. Drizzle with a good bit of olive oil to coat the potatoes. Sprinkle generously with your seasonings and mix well. I usually do it with my hands! Get in there and toss the potatoes, oil, and seasonings until completely covered and set aside. Set up two baking trays, lined with baking paper, and evenly spread out the potatoes.

Toss the trays in the oven for an hour, rotating after 30 minutes! While this is cooking, put your cut up veggies, and sausage, in the same mixing bowl, and repeat the oil and seasonings process. Mix very well and set aside. Then, remove the trays, and add the diced veggies and sausage mixture. Dividing between the two pans and mixing well with a spatula. Spread everything even again, and put back in the oven for the remaining 30 minutes. Remove from the oven after an hour and a half! Serve with mayo and ketchup, if you desire. Enjoy!
