BBQ Baked Beans

Nothing like a dish of BBQ Baked Beans to complete a southern dinner!!

Ingredients:
2 28 oz. cans plain pork and beans
½ cup ketchup
½ cup barbecue sauce
¼ cup brown sugar
a few drops of Liquid Smoke, optional
1 T yellow mustard
1 T Worcestershire sauce
2-3 cloves garlic, minced
1 medium onion, diced
salt and pepper to taste
8 slices of thick cut or center cut bacon

Instructions:
In a medium bowl, combine the ketchup, barbecue sauce, brown sugar, mustard, Worcestershire sauce, garlic, onion, and liquid smoke. Mix well and set aside. Open each can of beans, and pour off all the standing liquid at the top of the cans. Discard the liquid, and pour the beans into the ketchup mixture. Mix the beans gently with the ketchup mixture until thoroughly combined, and pour into a shallow 2 quart casserole dish. Cut the strips of raw bacon into 1 cm pieces and crumble over the top of the beans in an even layer. Bake the beans uncovered, at 350F/180C, for an hour, hour and a half, until the bacon is cooked through, and starting to crisp.

Notes:
– Be sure to keep the cans upright, and do not shake them before opening!! you want the liquid to rise to the top to drain it out!
– When I say “plain” pork and beans, I mean plain. Not bbq or baked beans. these already have more flavor added.
– Try to find thick, center cut bacon, thin bacon will burn, if cooked too long!
