Spicy Ramen Noodles

Ingredients:
8 ounces ramen noodles (use rice or whole wheat for gluten free)
⅓ cup chopped green onion (just the white/light green part)
1 T fresh grated ginger
1 T minced garlic
1 T oil
¼ cup soy sauce or tamari (gluten free)
2 T chili garlic sauce
1 T sriracha more or less to taste
1 T honey, maple syrup (vegan) or brown sugar
1 T rice vinegar
2 t toasted sesame oil
½ t red pepper flakes
Instructions:
Bring a pot of water to a boil and cook noodles according to package instructions. Add the chopped green onion, ginger, garlic and oil to a small sauce pan and saute for about 3-5 minutes. Add in all remaining sauce ingredients and whisk well. Simmer over low heat for about 5 minutes. Combine the cooked noodles with the sauce and let simmer for a few minutes to let the flavors blend. Taste and adjust flavors as desired. Serve with fresh green onion, cilantro and more red pepper flakes to taste!
