This Simple Vegan Stew is packed with vegetables, lentils, and bold seasonings. It’s perfect for those cozy evenings when you need a big bowl of comfort! Leftovers are great for lunch the next day, too.
Ingredients:
1 Tbsp olive oil
1 onion, diced
3 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 cup diced potatoes
1 cup cooked lentils
4 cups vegetable broth
2 Tbsp tomato paste
1 tsp thyme
Salt and pepper, to taste
Instructions:
Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened.
Add potatoes, lentils, broth, tomato paste, and thyme. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
Season with salt and pepper, and serve with crusty bread.
