There’s something magical about the combination of ham, potatoes, and creamy cheese. It’s like a warm hug on a chilly evening, a dish that feels like home no matter where you are. This Ham and Potato Au Gratin has quickly become one of my go-to comfort foods, and every time I make it, it brings back cherished memories of family gatherings and cozy nights in. Growing up, I vividly remember my mother’s kitchen always being filled with the scent of something baking—especially during the holidays. She had a way of turning humble ingredients into something extraordinary, and her potato dishes were always the star of the table. This recipe is inspired by her, but with a modern twist: tender slices of potatoes layered with savory ham, bathed in a creamy cheese sauce, and baked to golden perfection. It’s the kind of dish that makes you close your eyes after the first bite and say, “Wow, this tastes like love.” What I adore about this recipe is its versatility. It’s perfect as a hearty main course paired with a fresh green salad or served as a standout side dish during big celebrations like Easter or Christmas. The best part? It’s a wonderful way to use up leftover ham, which means nothing goes to waste. As the casserole bakes in the oven, the aroma fills the house, drawing everyone to the kitchen. When it’s finally time to serve, the bubbling, golden cheese on top gets everyone excited. And let’s not forget that moment when you scoop into the layers—potatoes soft enough to cut with a fork, smoky ham bits nestled between them, and that luscious, creamy sauce that ties it all together. Whether you’re making this for a special occasion or just a weeknight dinner, Ham and Potato Au Gratin is the kind of recipe that will quickly find a spot in your regular rotation. It’s a little bit nostalgic, a little bit indulgent, and 100% satisfying. So grab your apron and a casserole dish—you’re about to create something truly delicious!

Ingredients:
2 pounds potatoes, peeled and thinly sliced
1 1/2 cups cooked ham, diced
1 small onion, finely chopped
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese

Instructions:
Preheat oven to 350°F (175°C). Lightly grease a 2-quart casserole dish to prevent sticking. Layer the ingredients: Arrange half of the sliced potatoes at the bottom of the dish, followed by half of the ham and half of the onions. Repeat with the remaining potatoes, ham, and onions, layering as desired. Prepare the sauce: In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute, stirring constantly to eliminate the raw taste. Add the milk: Gradually whisk in the milk. Allow the mixture to simmer, stirring frequently, until it thickens. Season with salt, pepper, and paprika. Incorporate the cheese: Remove the sauce from heat and stir in the shredded cheddar until fully melted. Pour the sauce evenly over the layered potatoes, ham, and onions. Bake covered: Cover the dish with aluminum foil and bake for 60 minutes. Finish with Parmesan: Remove the foil, sprinkle Parmesan cheese over the top, and bake uncovered for an additional 20-30 minutes, or until bubbly and golden brown. Cool slightly before serving: Allow the dish to rest for a few minutes before serving to avoid burns and to let the flavors settle.
