Chicken Fajita Quesadilla combines two of my favorite things: Fajitas and Quesadillas! This is an easy recipe for a cheesy, flavorful chicken quesadilla made in just minutes! One of my favorite go-to dinners is Chicken Fajitas. It’s also one of my favorite things to order at a Mexican food restaurant! I love the combination of onions, peppers, meat and toppings inside tortillas. But I also love a cheesy quesadilla, too. So I thought, why not combine the two and make a Chicken Fajita Quesadilla?! Besides the cheesy goodness of this Chicken Fajita Quesadilla, the best part of this quesadilla is how quick it is to make.
Ingredients:
4 flour tortillas (8 inch tortillas)
1 lb chicken breast
1 large red pepper
½ large onion
2-3 Tbsp taco seasoning
2 cup shredded cheese (see note)
2 Tbsp butter
2 Tbsp olive oil, divided
Instructions:
Cut the chicken into small strands. Slice the pepper and onion into thin strands. In a skillet, saute the chicken with 1 tbsp oil. Season with the taco seasoning and cook until chicken is fully cooked. Remove from the skillet and cover to keep warm. Saute the peppers and onions with butter until vegetables reach desired tenderness. Add the chicken back and cook until chicken is heated. Add a quarter of the chicken mixture to one side of the tortilla, top with cheese and fold the tortilla. Repeat with the rest of the tortillas. In a skillet, cook the quesadillas over medium until the tortillas are crispy and cheese melts. Enjoy, friends.
Notes:
Cheese: you can use your favorite shredded cheese for the quesadillas.
