Ingredients:
1 lb potato gnocchi (homemade or store bought)
1 lb sweet Italian sausage meat
12 oz your favorite marinara sauce
⅓ cup good quality feta cheese crumbles
chopped parsley to garnish
Instructions:
In a medium pot, bring water to boil. Add the gnocchi and cook according to the package instructions. Drain, rinse well with cold water and set aside.
Form a small, bite-sized meatballs from the sweet Italian sausage. Place them in a large, non-stick skillet and cook for about 5 minutes on medium heat, shaking the skillet occasionally to turn the meatballs.
