We all could use a little more convenience in our lives, so why not make dinnertime easy with this 30-minute Sheet Pan Honey Glazed Pork Chops with Sweet Potatoes & Apples recipe! Now that school is back in session, our weeknights are busier than ever! Between the after school activities, homework, and impatient hungry kids…it’s hard to find the time to prepare a wholesome meal. And to be completely honest with you, on some of those busy nights, I’ve relied on cold cereal! I know, I know, brutal right?? Lol!
Ingredients:
6 boneless pork chops
3 sweet potatoes peeled & cut into cubes
2 red apples cored & sliced
2 tbsp olive oil
2 tbsp honey
2 tsp fresh thyme minced
2 tsp garlic powder
Salt and pepper to taste
Instructions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick cooking spray or spritz with olive oil spray. In a medium bowl, whisk together oil, honey, thyme, garlic powder, and salt/pepper to taste. Add in pork chops and sweet potatoes and toss until all ingredients are evenly coated with glaze. Spread sweet potatoes and pork on a baking sheet. Add apples and bake for about 25-30 minutes or until sweet potatoes are tender, and pork is thoroughly cooked. If you want your pork and sweet potatoes to be a little crispy, Broil on high for about 5 minutes. Enjoy!
