Chicken & Bacon Pasta Bake

Quick and easy dinner for a weeknight, when you don’t wanna bother with anything fancy!

Ingredients:
1 pound (500g) shell pasta (macaroni, penne) cooked as per instructions
1 medium onion, diced
1-2 chicken breasts, diced
4-5 slices of bacon, diced
2-3 mushrooms, sliced
200g container of sour cream
2 green onions, sliced
½ cup Bread crumbs
Fresh parsley, for garnish
1 cup Grated cheese, (parmesan, mozzarella) (extra – freshly grated parmesan cheese)

Instructions:
In a pan fry the onion, add chicken and cook thoroughly (can add herbs and salt and pepper if you want) – take out and place in a bowl. Add a bit more onion and bacon to the pan and cook, then add mushrooms cook till soft. Add the cooked chicken and the sour cream. Stir till the sour cream looks like a sauce. – don’t boil. (To make it more saucy add some chicken stock if you want). Put cooked shell pasta in a oven proof dish, pour chicken mixture of pasta and mix together so all of pasta is coated. Sprinkle over the spring onions. Mix together bread crumbs, grated cheese and if you like some grated parmesan cheese then sprinkle over the top of pasta. Put in oven at 180C for about 10 minutes or till all heated through and topping is golden. Serve with salad and garlic herb bread – yummy!
