Cajun Red Beans & Rice

Ingredients:
2 tablespoons olive oil
1 medium onion chopped
1 green pepper seeded and chopped
1 lb fully cooked smoked sausage, cut into ¼ inch slices
4 cloves garlic minced
salt and pepper to taste
1 1/2 teaspoons Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon chili powder
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried oregano
Pinch of red pepper flakes
1 can 15.5 oz black beans beans, drained
1 can 15.5 oz red kidney beans, drained
1 can 14.5 oz diced tomatoes (do not drain)
2 cups chicken broth
1 cup long grain white rice uncooked (jasmine/basmati)
Fresh parsley for garnish (optional)
Instructions:
Heat oil over medium heat in dutch oven or heavy stock pot. Add onion, peppers, and sausage. Cook for 5 minutes or until the onion softens, and sausage lightly browns. Reduce heat to medium low. Add garlic, and Cajun seasoning; cook for 1 minute. Add red beans, black beans, chicken broth, tomatoes, and rice, along with the rest of the seasonings. Make sure that the rice is down in the broth. Stir to combine, and bring to low boil. Reduce heat, cover and cook for 15-20 minutes or until rice is tender. Serve warm and enjoy!
