Taco Pasta Salad

Ingredients:
1 pound pasta (macaroni or rotini works well!)
2 pounds ground beef
1-2 packs taco seasoning (use more if you like it really zesty!!)
1 15 ounce can, black beans
1 cups cherry tomatoes halved
1 medium onion diced
2 cups shredded cheddar cheese
1 bell pepper, diced
1 cup shredded lettuce
1 1/2 cup nacho cheese Doritos, crushed roughl
1/2 cup black olives, sliced
1/2 cup Catalina, or French dressing
1/2 cup sour cream
Instructions:
Cook pasta according to directions on the box for al dente, drain the pasta and then rinse under cold water until cooled. While the pasta is cooking cook the ground beef over medium high heat, once cooked, drain the meat, and add the taco seasoning and mix well. Simmer for 10 to 15 minutes. Remove from heat. Wash and dice the tomatoes, and the pepper, and chop the onion. Shred the cheddar cheese, if you are not using pre-shredded and set it aside. Pour the black beans into a colander and rinse, then drain and set aside. Mix the Catalina, or French dressing, into the sour cream, and set aside. In a large mixing bowl combine the pasta, beef, black beans, lettuce, tomatoes, peppers, onions, cheese, black olives, and toss well to combine everything. Add in the sour cream mixture and mix well. Add salt and pepper to taste if desired. Serve immediately or store in the fridge.
