Cheesy Broccoli Chicken Rice

Ingredients:
4 cups rice, prepared (2c rice to 4c water)
1 to 2 chicken breasts, cooked (you can use leftover chicken as well, you will need about 1½ cups)
3 cloves Garlic, minced
2 med Onions, diced
1 small bell pepper, diced
3-4 Mushrooms, diced
1 good sized head of Broccoli
125g cream cheese with garlic and herbs
200g sour cream
2-3 cup shredded cheese (again, more or less according to personal preference)
Choice of Seasonings (I usually use garlic powder, onion powder, paprika, parsley, salt and pepper)
Method: I usually cut the veggies first to save time, also, shred the head of broccoli with a cheese grater! Start the rice cooking first, you can do the rest in the meantime. In a large frying pan, over medium high heat, add a little olive oil or butter, and heat to a sizzle. Add the garlic and brown it slightly, releasing the fragrance. Next, add the mushrooms, peppers, and onions, cooking for 5-6 minutes. Next, you will add in the seasonings, stirring well to incorporate, add the broccoli, and cook until soft and lightly browned. Add in the chicken and stir well to mix, cook for a few more minutes, to heat thoroughly. Remove from heat and set aside. Rice should be done soon! In a large mixing bowl, add the cream cheese and sour cream, mixing well. Add in the ingredients from the frying pan, making sure to scrape the pan with a spatula, and stirring well to make the sauce!! Next add in the hot rice, and the shredded cheese. Stir it up good, the shredded cheese will start to melt, and this is just what you want! Serve immediately while its nice and gooey! I usually serve mine with a loaf or two of garlic bread! Enjoy!
