Polish Potato Soup, or Kartoflanka, is a traditional recipe made with hearty potatoes, vegetables, and smoky kielbasa. This rustic soup is simple yet full of flavor, making it perfect for cozy family meals. Serve it with rye bread for an authentic Polish experience.
Ingredients:
6 medium potatoes, peeled and diced
2 smoked kielbasa sausages, sliced
1 small onion, diced
2 carrots, sliced
4 cups chicken or vegetable broth
1 cup sour cream
2 tbsp butter
1 tsp marjoram
Salt and pepper to taste
Fresh dill for garnish
Instructions
Cook the Sausage: In a large pot, melt butter over medium heat. Add kielbasa slices and cook until browned. Remove and set aside.
Sauté Vegetables: Add onion and carrots to the pot, cooking for 5-7 minutes until softened.
Add Potatoes and Broth: Stir in potatoes, broth, marjoram, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25 minutes.
Add Sour Cream: Stir in sour cream and return the kielbasa to the pot. Simmer for 5 more minutes.
Serve: Garnish with fresh dill and serve warm with rye bread.
