Ingredients:
8 boneless, skinless chicken thighs
2 tablespoons olive oil
¾ cup parmesan cheese, grated
1 cup plain bread crumbs
3 cloves garlic minced, or two teaspoons garlic powder
½ teaspoon Italian Seasoning, dried
½ teaspoon oregano, dried
salt and black pepper to taste
Instructions:
Prepare a 9×13 baking dish with non-stick spray and set aside. In a shallow dish combine olive oil and garlic*. In a second shallow dish mix together bread crumbs, parmesan, Italian Seasoning and oregano. Season the chicken thighs with salt and pepper. Next take one thigh and dip it into the oil mixture. Then dredge it through the bread crumb mixture. Place the chicken thigh in the prepared baking dish, then repeat for each thigh. Bake in a 375 degrees for 30 minutes or until a meat thermometer inserted in the thickest part of the thigh reads 165 degrees. Place chicken under broiler for two minutes to brown the cheese. Garnish with fresh parsley if desired.
Recipe Notes:
*If you are using garlic powder add the powder to the breadcrumb mixture add the powder to the oil might prevent it from sticking to the chicken
