Ingredients:
6-8 medium baked potatoes, or boiled potatoes
¼ cup butter
4 oz cream cheese softened
⅔ cup sour cream
½ cup milk or cream (add more or less to taste)
½ teaspoon garlic powder
1 tablespoon fresh parsley chopped
2 cups cheddar cheese shredded
2 green onions thinly sliced
10 slices bacon cooked & crumbled
salt & pepper to taste
Toppings:
1 green onion sliced
2 slices bacon cooked & crumbled
½ cup cheddar cheese

Instructions:
Set the temperature of the oven to 375°F for preheating. Use a potato masher to crush the warm, baked or boiled potatoes. Incorporate butter, cream cheese, and sour cream, continuously mashing while adding milk or cream gradually until the mixture becomes smooth and creamy. Mix in the remaining ingredients (excluding the toppings), and transfer the mixture to a 2-quart casserole dish. Top with desired ingredients, and place the dish in the oven. Roast for 25 to 30 minutes, or until the cheese has melted and the potatoes have been thoroughly heated.
