
Pepperoni Pizza Grilled Cheese Sandwiches

Ingredients:
½ cup mayonnaise
½ tsp parsley
½ tsp Italian seasoning
1 tsp garlic powder
salt and pepper, to taste
bread of choice
pizza sauce
cheese slices, cheddar, mozzarella, provolone, or gouda, will work well
pepperoni slices
Instructions: Amounts of the above ingredients will depend on the amount of sandwiches you plan to make. More needed for more sandwiches!! The basic recipe for 2 sandwiches, is as follows: Make a simple Aioli by combining the first 5 ingredients, and mix well. Heat a large frying pan on medium heat, with a little butter in the bottom. Spread the aioli on one side of each of the 4 slices of bread. When the butter is melted, and coats the bottom of the pan, toss in 2 slices of bread.
Build the sandwiches as follows: Bread slice, one slice cheese, thin layer of pizza sauce, pepperoni, cheese, second slice of bread. Let the sandwich cook, checking every minute or so for doneness, by lifting the corner with a flipper. When it starts to brown, carefully rest a butter knife on the top and flip the sandwich to brown the other side. If the first side is still a bit light, you can flip it again to finish to your desired level of golden brown. When both sides are fully done, remove to a plate, and let cool for a few minutes, it will be very hot! Enjoy with a nice cold drink!
